134 for 28 hours then a sear in cast iron. Served with the Serious Eats version of a bearnaise sauce and roasted carrots, beets, fennel and asparagus with hot honey. Even my picky teens couldn't get enough.

    Interesting… How tender was it? Did an 18hr eye round for Christmas and it was reasonably tender, but nothing crazy. 28 hours seems like it would help to really start to break it down a bit more just because of the longer time

    Looks good to me. Just my opinion though, but a plain white plate would make this look stunning. The designed plates takes away from the look of the food, distracts the eye, no?
